Leigh’s Bruschetta

This easy recipe is incredibly delicious and perfectly highlights the fresh summer tomatoes. My garden is exploding with all types of heirloom tomatoes and cherry tomatoes, and I love how sweet they are with the addition of only a few other ingredients like garlic and salt. I made this the other day and enjoyed it with a glass of the Lolati 2023 Primitivo, and it was amazing.

Ingredients

  • 1 lb Heirloom or summer season tomatoes

  • Minced garlic from 1-2 cloves, or as much as you like

  • Chopped or torn fresh basil, as much as you like

  • Olive oil (as much as you like)

  • Fresh cracked pepper

  • Maldon salt

  • Toasted sourdough bread

Directions: Roughly chop tomatoes and add to a bowl.  Add garlic, olive oil, salt, and pepper.  Serve atop toasted bread.

Other suggestions for mix-ins

  • Chopped kalamata olives

  • Fresh mozzarella, cubed

  • A can of high-quality tuna

  • Feta cheese

  • Chopped cucumbers 

Suggestions beyond bread...

  • Add to cooked pasta

  • Use as a topping for zucchini fritters

  • Add to warmed focaccia bread

  • Serve on top of whipped ricotta cheese

  • Add to any cooked whole grain to make a nice summer salad (bulgar, farro, barley, etc.)

  • Serve on roasted fish or grilled chicken thighs
