Tuna Melt

I love to make my own sourdough bread of all sorts and while this recipe may seem simple, it's one of my go to lunches and it doesn't disappoint.  I mean, who doesn't love a tuna melt?!  I like to eat mine with sliced Granny Smith apples (very grade-school, I know), kettle chips or even kimchi for a fun, spicy companion.  This recipe makes two tuna melts.  One for you and one for whomever you want to have lunch with. it also pairs nicely with a glass of Lolati 2022 Sauvignon Blanc!

Makes 2 servings

INGREDIENTS

  • Sourdough bread

  • Can of tuna, drained

  • 1/4 cup of mayonnaise

  • 1 Tbsp harissa

  • 1 Tbsp capers

  • 1 small celery stalk, chopped

  • Olive oil, amount up to your preference

  • Salt and pepper, to taste

  • Sliced tomatoes, if you like

  • 4 slices of sharp cheddar cheese

DIRECTIONS

Step 1

Toast two large slices of sourdough bread.

Step 2

In a medium-sized bowl, mix together the tuna, mayonnaise, harissa, capers, and celery.  Add olive oil (I do about 1 Tbsp), salt, and pepper to your taste.  

Step 3

Spread the tuna mixture evenly over the two slices of toasted sourdough bread.  Add sliced tomatoes and then cover with the slices of cheddar cheese.  

Step 4

Place the toasts onto a half sheet pan and broil in the oven or in a toaster oven for about 5 minutes until the cheese is nicely melted. ENJOY!
