Orange, Olive, and Basil Pasta

In celebration of Mother’s Day, I wanted to feature one of my mom’s favorite pasta recipes. It’s fresh, easy, and perfect for warm, sunny days. She likes to pair it with the 2022 Lolati GSM. Enjoy!

Serves 4

INGREDIENTS

  • Pasta of choice: recommend ¾ pound spaghetti or linguine

  • ¼ cup butter

  • Finely grated zest of two large oranges

  • 20 Greek (Kalamata) olives, pitted and chopped

  • 2 large garlic cloves, finely chopped (optional)

  • Juice from 1 large orange

  • Lots of black pepper

  • 1/3 cup chopped fresh basil leaves

  • ¼ cup grated Parmesan cheese

  • 1 cup spinach leaves, finely chopped

  • Mushrooms (optional)

DIRECTIONS

Boil water and cook pasta.

Melt butter in a medium skillet.

Add orange zest, olives, and garlic; cook for 1 minute.

Add orange juice and pepper and cook for another minute.

Add spinach and mushrooms (if using) and cook for another minute.

Toss with hot pasta.

Add basil and Parmesan cheese, and toss again.
